If you’re going to make a cake for St. Patrick’s Day, it might as well be a Chocolate Guinness Cake. No gimmicks, no weird twists—just a proper, dark chocolate cake with a good hit of Guinness Stout, topped with thick cream cheese frosting.

Chef Ian made this one today, and it’s exactly what it should be. The Guinness gives it a deeper flavour, but don’t worry, it doesn’t taste like you’re eating a pint. It just makes the chocolate richer, stops it from being too sweet, and keeps the texture right. The frosting is smooth, slightly tangy, and piled on thick, because no one wants a stingy amount of icing on a cake like this.

It’s the kind of cake that works for any time of year, but since St. Patrick’s Day is coming, you’ve got an excuse. If you fancy a slice, come and get one before it’s gone.
